Kes, I'll have to get you a botanical shot of this plant - all I photographed was single blooms in the same manner. Chicory is in the sunflower family. It is a wiry plant with branched stems and only a few leaves on the upper part with heads of blue "ray" flowers that bloom along the main branches. The plants can be quite tall - up to 6 ft. I have eaten the roots as a cooked vegetable and it can also be roasted and ground up as a coffee substitute. The young leaves will be edible as a salad. The Japanese cultivate the root vegetable and call it "gobo." I find the wild vegetable to be a lot tougher. The roots are deep so it is a lot of work to dig in the wild. Eb

Great angle with fine details, Eb! Would you happen to have another shot or two of this plant? I've been told that we have it locally but I'm not sure what to look for.
If crude keeps going up I'll probably have to know which plants I can eat.
