About As well as fruit, freshly baked bread, such as these bagels are a staple amongst the people of Xinjiang. These ones are great right out of the oven, but they turn to stone after an hour or two. The photo was taken in Niya, a remote town at the south end of the Cross Taklamakan Desert Highway.

Amitava... they do taste great when warm and fresh. Which lasts for about 30-60 minutes. Then it`s like eating a brick.
