Wonderful Photograph Christine, Great Colors. Very well presented. Seems a bit soft. try using your AF-area mode - Single area, Dynamic area, Closest subject settings and your Center-weighted - Diameter of center-weighted metering circle; 6mm, 8mm, 10mm or 12mm setting. You will achieve some of what you are doing is PS..
