Dear Stuart,
shooting raw gives you the advantage to correct your image later on with the help of software and a fast computer..Getting the right exposure and white balance,sharpening etc its like shooting on negative film .Canon raw software comes with the camera.I prefer software like Phase One (capture one ) or Adobe Photoshop CS3 or Cs4.
Only overexposed and shots cannot be saved in raw.

Of course you need the time and the interest to work with pc.
Raw files are much bigger than Jpg.
