I have noticed when using any of my large lenes like the 300MM F2.8 or the 80-400MM the grain ratio is too high.

I also keep the ISO for photographing birds on 200, is it possible the cropping of the image causing this problem with the grain ?

You crop an image, blow up the resulting crop to the original size, you're ending up with less datapoints per millimeter or printed picture (or per pixel shown on screen).
To fill in the gaps, data has to be interpolated which can lead to a "grainy" look depending on the algorithm and settings used.
