Hi Bill,
I shoot in AV mode- aperture priority.
Also, my canon lens 400 mm DO F/4 allows a super fast focusing. Most of my in flight shoots are taken at F/5 in sunny days with shutter speed over 2000/sec. AV controls the shutter speed, so you don't have to worry about it.
It's important to mention that for birds in flight you want to select was is called "Al Servo" for Canon or "Continuous Servo" for Nikon. And also, very important keep your lens in autofocus. And I almost forgot.
My buddy Marcus Armani recommends ISO 400 (Birds in Flight)even for sunny days. That allows you to capture some details from wing shadows.
