Many thanks for your kind and honest comment ~ much appreciated!
With regarding to replacing skies: I generally select the old sky using the magic wand tool ~ I set the tolerance to between 20 and 40 and usually untick the contiguous box so that all the bits of sky between branches etc., get selected. I sometimes 'expand' the selection by 1 pixel and usually 'feather' it be about .4 of a pixel and then mask the selection.
Next I drop in the new sky, making sure that the light is coming from the right direction, etc., and that it 'fits' the picture I'm dropping it into.
Then I get rid of the 'mask' on the original, use the 'matting' command to get rid of the fringe around the edge, and then check to see if there's any pale pixels remaining around trees, etc. If there is, I either darken them with the 'burn' tool; 'paint over them with an appropriate colour chosen with the eye-dropper tool (after first 'locking' the pixels; or erase them with a very fine, soft-edged brush.

Nice photo to leave us with, Chris. I still think the British Tourist Authority should use your photos to illustrate travel brochures although the truth in advertising thing might rule out some of your favourite skies! You've filled this frame with good stuff, strong composition and the usual brilliant colours. Nice range of textures, too.
