Also another Factor is that we are Approximately 3400ft above Sea Level!

A just a little...Artistic Licence!....However it also depends on the Camera Software Settings....Most of My Cloud Photographs are taken with a Fuji s5000...which seems to have more saturation....Jeff!

I've finally figured out what feels funny about your panoramas, Jeff: most of the clouds are blue. I was driving home a moment ago under broken coverage, and I mentally began to compare what I was seeing with your photos, and it dawned on me. Are you tinting the clouds or oversaturating the colors?
