I think the skin tones would have been ok with a polarising filter on. However, to be safe you could have taken a secon shot one with and one without, although you did say they wanted a candid feel to the images.

you can use either Hoya blue intesifier or as you have said a Hoya polarizing filter.I think they are not very expensive.Just experiment on these two.Bye Bye!

What sort of filter would you recommend? Thought of using a polarising filter to bring out the contrast in the sky, just not sure how the skin tones would have looked. I've never shot people with a polariser on before, does it look ok?

Try to use a filter to make the sky more tense.The effect would be even greater, I am sure the couple have really liked this beautiful , happy image!:) Congratulations.
