And thank you for passing on the suggestion from Marcus. Now that I have made this same mistake twice with disappointing results, I hope to learn from this and never repeat it again and any ideas to make sure of this are certainly appreciated.
Below is an amalgamation of a few different articles to answer your question.

Birdwatchers are flocking to Nova Scotia's Annapolis Valley to catch a glimpse of a rare species: the bald eagle. The open waters allow the birds to catch fish all winter. But a few extremely cold winters in the early 1960s hurt the bald eagle population. Younger birds weren't able to get food during the harshest part of the winter. A farmer in the area decided to help them out by putting his dead chickens out for the eagles to eat.
Over the years other farmers also began disposing of a few dead chicks each day by depositing them out in their fields as well. Each farmer has a natural mortality of one or two percent among the chickens, and with millions of chickens being raised in the area the bald eagles were quick to catch on.
This bonanza of extra winter food began attracting hundreds of eagles that would normally spend their winters foraging along the Atlantic coast. The eagles began a daily circuit of the chicken farms, competing with each other for the new and easy source of food. Soon the word spread among birders, who came by the carload on weekends to witness the eagles.
Before long, local people organized Eagle Weekend, an annual event in late January that has attracted thousands of people eager to watch eagles at close range. Now between 400 and 600 eagles are counted here each winter, and a few have stayed to nest.

Hi Ed, High ISO certainly helped freeze the action.
I just noticed your shutter speed was at 1/4000 sec and the aperture was f8, yet you had blown out the white on his head. Typically happens when ISO is too high. I saw your explanation, happens all the time to me as well if I've been doing indoor shooting and forget to "reset". Marcus' tip on this is to too shoot only at 400 ISO, I'm learning this also, trying to recover a noisy bird photo with Noise Ninja somehow removes the details from the feathers. I guess for birds, it's doesn't work too well. But as they say, practice makes perfect. Are these Eagles common at your location?

You have no idea how pleased I am to receive some positive comments on this series. I actually accidentally had the ISO set at 1600 from a previous session of night photography and almost ruined the shots from the whole day. Only with the help of Noise Ninja (recommended by Dave Holland: http://www.usefilm.com/photographer/375.html) did I manage to salvage these.

Awesome shot Edward! I can imaging how hard it is to keep the exposure here - the white head is easily blown. Looks like you caught him in really bright light and high iso.
